Fish soup of Fano “Brodetto alla Fanese”

IFano is a generous port. Here the boats return with their fragrant and healthy catch of anchovies,sardines, mackerel, cuttlefish, soles, sea snails etc..The Brodetto alla Fanese is a typical Adriatic fish soup prepared with tomatoes and vinegar.

Vincisgrassi

It’s a delectable recipe of pastas. Several layers of pastas and tomatoes, minced meat, “besciamella” sauce and parmesan cheese.

Formaggio di Fossa (Cheese)

It’s a pecorino cheese aged in the pits which were once used for food conservation ; the cheeses ripen there until November. The result is a cheese with a persistent olfactory quality and a particular arom, a strong flavour which is sharp but with a mellow quality. Excellent served with fruit preserves or with honey, the formaggio di fossa is a dish of a high class.

The Pesaro region is famous for pork-butchering and the art of curing pork cuts.

The truffles

Rarely can a province offer such an abundance of interesting food. The most evident example is that of the truffles, which is found at the fairs of S.Agata Feltria, S.Angelo in Vado and Acqualagna. Acqualagna- ca.30 km distant from our Apartment- is recognised by law as the center of collection and commercialisation for Italy.(www.comune.acqualagna.ps.it)
This small town holds an international truffle exhibition and market the first week of November.

The wines

The wines “Sangiovese” and “Bianchello del Metauro” are high quality wines.
Bianchello is a Doc wine. – Tacitus narrates that this wine cost Hasdrubal and his soldiers, who had drunk too much Bianchello, defeat in a battle against the Romans in 207 B.C…on the river Metaurus. The “Vernaccia di Pergola” and the “Pinot nero”  also reach high quality levels. The latter was rescued from oblivion by Napoleon’s army and replanted on the wonderful coastal ridge of parco S.Bartolo.
 

The extra virgin olive oil

In the area from Cartoceto to Piagge a high quality extra-virgin olive oil is produced
